HCLF gluten free VEGAN patties

These patties came about quite simply actually- with just three base ingredients that are key to any vegan diet : beans, rice and potatoes! I can make SO many meals from variables of these three ingredients, the below recipe is a BASE so feel free to experiment... such as switching in sweet potato or adding half sweet potato to the potato whatever works with what you have on hand and the flavours your wanting to create :) speaking of flavours I'll add a list of "flavour enhancers" you can also choose whether to add or not, I recommend adding at least a few.

What you'll need: (quantities wise this recipe can also vary, just feel the mixture to make sure it holds it shape)

1 medium/large boiled potato- coarsely mashed (I like to leave the skin on mine)

1 cup cooked rice/quinoa blend ( as I mentioned above whatever you have will work- I really like to cook a mixture of brown rice with tri-colour quinoa as the flavours work really well together, but white rice, black rice or just quinoa are also great!)

1/2 can of black beans (or kidney beans OR if you can't decide which bean just use mixed beans!!)

the method is so simple... give everything a good mix together then shape into the size patties your wanting to make- then bake in a moderate oven until golden brown ENJOY :)

ground spices- such as cumin, paprika, basil

chilli flakes

curry powder
