SPICY Black Bean SAUCE

I know, ANOTHER noodle recipe (well...just the sauce). Because lets be honest they are my staple and I just change the sauce to keep things interesting ;) I like to pair my noodles with baked sweet potatoes for the full experience, theres something about scooping some soft and gooey sweet potato with saucy noodles that makes for the perfect mouthful. They are super simple yet satisfying along with being a cheap meal to make! This sauce is quite different to the others- I'm honestly starting to feel like 90% of my blog is noodles...(haha theres only another two but lots more on the cards), Traditionally this recipe uses fermented black beans but I just went with what I had on hand!

What you'll need:

1/2 cup of black beans (your choice if they are soaked from dry or rinsed from the can, I had some freshly soaked & cooked ones readily available)

1/2 a red onion

1 clove of garlic

a knob of fresh ginger

1 tsp of gluten free flour (thickening agent)

1 TBS rice wine vinegar- I found a really natural one with little additives at my local asian grocer

2 TBS salt reduced tamari

1.5 TBS coconut sugar

squeeze of sriracha or fresh chilli if you'd prefer (I used both)

Start by sautéing the onions in a pan until translucent, add the garlic to slightly caramelise. Allow this to cool, take around 3/4 of the black beans and add to the base of your blender, along with the cooked onions & garlic, fresh ginger rice vinegar, tamari and coconut sugar blend until combine.

Add this "sauce" mixture back into a pan along with the rest of the black beans, stir constantly until it starts to simmer- TASTE at this point and add anything you feel is required along with enough chilli/sriracha to your liking :)

Combine the flour with some warm water until a paste is formed then add this to the sauce thats on the stove- allow this to cook off and naturally thicken the sauce (reduce heat). Once this is done the sauce is complete and ready to be stirred through noodles or lots of steamed veg
