3 Ingredient PUMPKIN PIZZA base
look at me GO! on a roll with these recipe posts :) two in a row. I'm finding the time to write them up in the evening, its the perfect way to wind down after dinner and before bed. So here I go with my cup of sleepy time tea in hand ;) (thankfully this isn't an difficult one)
This recipe does tend to vary each time, personally I've tested it countless times and with each brings a slightly different yet delicious result! This could entirely be that I'm a very free willed cook and refrain from meaning exact amount... and have the tendency to just eye everything
What you'll need:
It is quite literary as easy as 1,2,3
1 cup of pureed pumpkin (I make my own by steaming then blending whatever variety I have on hand- this is the first thing that can affect your result some are sweeter than others and some have a higher water content...)
3 TBS of ground flaxseeds or flax meal
1.5 cups of quinoa flour (I have tried other varieties and nothing quite gives the same result!)
the following I wouldn't really count as "ingredients"
1 tsp of baking powder
a good pinch of salt
1/2 teaspoon of dried basil/oregano/rosemary or a "Italian" blend which generally has all 3
Preheat your oven to 200 degrees celsius, start by prepping the pumpkin puree if you haven't already (steam pumpkin until very soft then blend! A high powered blender won't require any liquid). Sift quinoa flour with baking powder into a large mixing bowl, add flax, seasoning and salt then stir through your pumpkin puree until a "dough" is formed (it may be really stiff and need extra liquid/puree or even very runny which can also work) simple spread the mixture onto a lined baking tray or roll it out again depends entirely on the consistency into the desired shape/size it's also up to you if you want to ADD a crust. Bake the base on its own for around 20 minutes or until it starts to turn golden brown- FLIP IT then top with sauce and whatever toppings your heart desires I'll insert some pictures for inspiration. I LOVE a double carbed potato pizza with broccoli and caramelised onions...MMmmm
