Oh Byron Baby

A more personal post this time, because I've received quite a few questions in regards to my recent trip to Byron and may be trying to save a few recipes for something extra special...

I don’t think I’ve instantly “clicked” with somewhere, one or thing more than I did when we first drove into the bay that sunny Friday September 30th afternoon, we had driven over 700kms to get there and boy was it worth it!

It may sound like a relationship, but I’d refer to it as a short lived love affair. Seriously Byron Bay is the place to be!!

We set out on our Journey the morning after I flew into Sydney, after an average nights’ rest (O.K we were up late cooking rice and sweet potatoes…typical vegans) and breakfast which of course included a double fudge brownie. Defiantly required to conquer the over one thousand kilometres, ahead of us in some mighty 4 days...We spent more time in the car then out.

Which makes complete and utter sense because we also managed to utilise the car as our accommodation i.e. slept & ate in it… The upside to this was we could choose when to stop and where we wanted to stay- although slightly stressful when we arrived in Byron as it isn’t entirely legal. But nothing beats waking up to the sound of the ocean, and going for a refreshing dip to wake you up!

I cannot thank one human being enough for this wonderful experience, for challenging me personally to new things and opening my eyes to so many things beyond her years. Thank you Ash for the countless hours spent in your car together listening to my horrid tone-deaf voice. Although every time I listen to waves I’m reminded of these wonderful days.

See you soon Byron- I promise it wont be long I need to satisfy my desire to try all that abundantly delicious vegan food!! I wanted to keep this short&sweet but I feel like the following pictures perfectly sum up the trip
