Amped UP Almond Butter Satay

This is a re-make of my favourite vegan satay sauce, that actually only came about because I have officially run out of PB2. And keep putting off making an I-HERB order and so the list grows... I was feeling extra lazy this day and decided to make this entirely in my favourite & only kitchen appliance (MY VITAMIX <3) , this meal comes together in just 10minutes- start by soaking the rice noodles and your half way there!

What you'll need:

a couple of soaked dates ( I used medjool so if your using dried throw in another 1 or 2- be sure to reserve the liquid)

2 TBS of Almond Butter or alternatively around 1/4 cup of almonds

3 TBS of Tamari (I prefer to use sodium reduced)

1 knob of fresh ginger- just peel and chuck straight in the blender

fresh chilli, I put a whole one in there but go with your personal preference

the juice of half a lemon

Add all the ingredients to your Vitamix or other high-speed/powered blender and let it do it's magic- within minutes you'll have a sauce to toss through the soaked noodles and lots of veg (I just went with frozen ;))
