Terrific Tofu Scramble

breakfast can be that meal that stumps a lot of people, what to eat or when to eat it?! for me I cannot leave the house without it...whether that is at 5am or 10am I need something in my belly almost instantly after waking, when I'm in a rush it can be a hassle but I've come to realise its been a good habit to get into.

It's really rare for me to want a savoury breakfast, I usually sort my sweet tooth out first thing in the morning. Otherwise I find the cravings last ALL day, although when I do opt for the savoury variety over something sweet it's usually this Scrambled Tofu paired with some toast and your set! or perhaps pancakes/waffles...if you want both savoury and sweet at the same time

What You'll Need:

*serves 1

100grams of firm tofu

A good pinch of turmeric

1/2 an red onion

1/4 cup of nutritional yeast

black salt (enough to season + give an "eggy" taste)

Any additional add-ins that may take your fancy, a few of my favourites include: tomatoes, spinach, corn, olives & mushrooms (which I prefer to cook separately to add at the end, so they don't go soggy). Leftover roast veg also goes down a treat, This is a really versatile recipe and almost any veg would work! just be sure to adjust cooking times

Start by sautéing the diced onion with water in a non-stick pan, when the onion is translucent add any of the veg that requires cooking. Once this is done add the broken tofu (I find the easiest way is to use the back of a fork to break it up), cook the tofu for a few minutes. Until slightly coloured then add the turmeric that has been mixed with some hot water, allow this to cook off whilst thoroughly mixing through- just before all the moisture has evaporated add the nutritional yeast,black salt, along with any veg that doesn't require cooking finally season to taste with pepper and chilli flakes.
