The BEST damn Vegan Cheese Sauce

miss cheese? or just crave those foods that are traditionally laden in the dairy version... fear-not as I have created a vegan version that is also HCLF, oil+gluten free and FODMAP friendly, YES you can call it healthy! With just a few simple ingredients and a trusty high-speed blender ( I LURVEEE my Vitamix) you'll be set and ready to include this sauce in a variety of things whether it be pizza, nachos or mac'n'cheese just to name a few or as I personally prefer straight from the blender

What You'll Need:

1x small carrot

1/2 a potato

nutritional yeast ALOT (if your anything like me, usually anywhere from 1/4 to half a cup)

curry powder- start small add more

a pinch tumeric

plantbased mylk- i went with rice for this recipe

Method

it is as simple as these two steps

1. chop potato and carrot into small pieces and boil in enough water to cover with lid on until very soft

2. remove potato and carrot from the water and add to your blender along with seasoning (add salt and pepper if you wish) blend with a little of the cooking water to get it going then a bit of mylk to make it nice and creamy

*measurements are all approximate as it depends entirely on personal preference and what exactly you are using it for
